Fattoria Carmignani’s Vin Santo D.O.C. is produced in Montecarlo, among the hills of the province of Lucca, following a winemaking process in which time itself becomes one of the wine’s essential ingredients.

Produced from Trebbiano and Colombana grapes, the winemaking process begins with a long period of natural drying on traditional racks after the harvest. As the grapes gradually become more concentrated, they prepare for the next stage: after pressing, the must is transferred to traditional wooden caratelli, where fermentation and maturation continue for at least four years.

This long wait produces an amber-yellow wine with an intense and persistent bouquet, revealing aromas of dried figs, honey and caramel. On the palate, its softness is balanced by good acidity, accompanied by notes of dried fruit and a rich aromatic complexity.
